It seems like forever ago that we wanted a simpler life. The bustle of the city and the closeness of the suburban life fit like a too-tight sweater. AT 48 we began our journey toward self sufficiency. We started with research and now, 7 years later, we have gotten our feet wet and found a direction. It seems to always be a learning process and a "step toward the goal". When the drive gate shuts, locking the world out of our little piece of heaven feels just right.

We have been busy makin'
bacon. This particular belly was dry cured in Honey from Heritage Hope Farm and brown sugar, then smoked using cherry wood.
Not all of the pig is edible. About 57% of a hog makes it from the farm to the pan. A 250 lb. Red Wattle will yield approximately 144 pounds of retail cuts. Roughly 28% of a hog’s live weight is inedible product that is removed during processing. A hog that has a live weight of 250 pounds will have a dressed weight of about 180 pounds.. The carcass is then placed in a cooler. As it cools, another 20% is lost due to the cooling and aging process. This leaves roughly 144 pounds of retail cuts.
In short, a 250 pound hog will yield 144 pounds of meat for your freezer. If you are using the milk crate visual, that is 9-10 milk crates.
